As the prices were too expensive for the average Indian citizen, tea vendors used spices, milk, and sugar to make and sell chai in India. By the 1960s, black tea became more affordable and was used along with spices, milk, and sugar to make what is now popularly known as masala chai.
In ancient India, chai was not the name used for the tea we consume today, but for a healing concoction made by brewing various herbs and spices, much like the traditional Kada. The chai consumed in earlier years did not consist of any tea leaves, and its recipes varied depending on the seasons and available ingredients.
However, there is a slight difference between a chai and Kada. Although chai uses herbs and spices that concern mainly with aroma, Kada uses herbs, leaves, and flowers primarily for their medicinal properties. Also, chai is brewed for a lesser time compared to Kada.
